One of the most interesting periods in Cristina's life was when she produced paintings of typical Mexican fruits and vegetables as a vibrant celebration of her Mexican heritage. In the mid-1990s, she created a series of paintings featuring close-ups of various foods against striking solid colored backgrounds. One of her notable works from this series is a painting of Mexican spring onions, or cebollas cambray, cascading into a wicker basket. Another captivating piece features nopales and red prickly pears. These ingredients hold special significance in Mexican cuisine and are a testament to Rubalcava's deep connection to her culinary traditions. Her paintings showcase and promote Mexican culture abroad. They serve as a dual cultural legacy that pays tribute to the incomparable Mexican art and celebrates the rich gastronomic history of Mexico. Through her art, Rubalcava beautifully encapsulates the flavors, colors, and textures of Mexican gastronomy.
